A recipe from Jaquot who hosts our veg shed in her bothy.
ROASTED CABBAGE,SAUSAGE & TOMATO CASSEROLE>

1 small red cabbage
4tbs olive oil
300gm cherry tomatoes
2 slices sourdough bread(I've used torn up crusts of ordinary bread)
2 red onions cut into thin wedges
6 pork sausages
1 big teas cumin seeds crushed
1tbs lemon thyme leaves
3 tbs chopped parsley
Preheat oven to 200'.Cut cabbage into 3cm wedges.Put into large roasting tin and toss with 2tbs oil.Season and roast 20 mins. Add tomatoes,bread,onions,sausages,cumin,thyme,2tbs water & remaining 2tbs oil.Season.Mix it altogether and return to oven for 20 mins.Then stir everything again and turn sausages.Roast another 15-20 mins until veg tender & sausages cooked.Serve from dish with parsley sprinkled over. Enjoy!
